A very popular dish done in the microwave. Salmon is not traditionally served in Chinese restaurants, but it goes very well with the black bean sauce. There is no fixed recipe for this, however a step-by-step description should be sufficient.

Ingredients:

  • Salmon fillet
  • Black bean garlic sauce (shown)
  • Shaoxing rice wine (shown) or dry sherry
  • Slivered ginger
  • Slivered scallions
  • Napa cabbage leaf (optional)

In a deep dish quiche or pie pan place place fillet on cabbage leaf.

Coat fillet with black bean garlic sauce.

Add slivered ginger …

… and slivered scallions.

Sprinkle with Shiaoxing wine. (This is the liquid needed for steaming.)

Cover loosely with plastic wrap, allowing steam to vent from the sides. Place in microwave oven and cook for about 12 minutes per inch of fish. (The time will vary with the type and wattage of the microwave.)
